
Marry Me Gnocchi Soup
10 cups (6 servings of 1.5 cups each)
Ingredients
- 1 cup bacon, roughly chopped
- 1 tbsp Lactantia unsalted butter
- 1 cup white onion, diced
- Salt and pepper, to taste
- 4 cloves garlic, minced
- ¼ cup sundried tomatoes, finely chopped
- 2 tsp fresh thyme, picked
- 1 tsp chili flakes (optional)
- 5 cups chicken stock
- 3 cups roughly chopped kale
- 1 lb premade potato gnocchi
- ½ cup Lactantia heavy cream
- ½ cup Lactantia 2% milk
- 2 tbsp lemon juice
- ¼ cup grated Parmesan cheese
Directions
Safety & Prep:
- Wash hands thoroughly and sanitize all work surfaces.
- Use the proper color-coded cutting board for each ingredient type.
Cook Bacon & Aromatics:
- In a large pot over medium-high heat, cook bacon until browned and crisp, about 3–4 minutes. Remove bacon and set aside. Discard excess bacon fat, but do not wash the pot.
- In the same pot, melt butter. Add diced onions with salt and pepper. Sauté for 5–6 minutes until golden but not caramelized.
- Add garlic, sun-dried tomatoes, thyme, and chili flakes (if using). Cook until fragrant, about 1 minute.
- Return half of the cooked bacon to the pot.
Simmer Soup:
- Deglaze the pot with chicken stock. Bring to a boil, then reduce to a simmer for 10 minutes.
- Add gnocchi, kale, heavy cream, milk, and lemon juice. Continue simmering for 5 minutes or until gnocchi floats to the surface.
Serve:
- Ladle soup into bowls and garnish with remaining bacon and grated Parmesan cheese.
Tip:
- Prepare broth ahead of time. When ready to serve, add gnocchi, kale, cream, milk, and lemon juice. Simmer until gnocchi floats.
