Autumn Grilled Cheese

4 sandwiches

Ingredients

  • 8 slices bacon, cooked
  • 7 tbsp unsalted Lactantia butter, divided
  • 3 tbsp maple syrup
  • 2 tbsp brown sugar
  • 1 shallot, thinly sliced
  • 2 Honeycrisp apples, thinly sliced
  • 13 sprigs fresh thyme
  • 8 slices Cracker Barrel provolone cheese
  • 1 cup Black Diamond old cheddar, grated, divided
  • 8 slices sourdough bread

Directions

Safety & Prep:

  1. Wash hands thoroughly and sanitize all work surfaces.
  2. Use the proper color-coded cutting board for each ingredient type.

Prepare Apple Mixture:

  1. In a large skillet over medium heat, melt 3 tbsp butter. Add maple syrup and brown sugar, stirring until sugar dissolves.
  2. Add sliced shallots and cook for 2 minutes.
  3. Add apples and cook, stirring often, for about 10 minutes until fork-tender.
  4. Increase heat and reduce remaining liquid for 2 minutes. Remove from heat.

Prepare Cheese Mixture:

  1. In a bowl, combine grated cheddar and fresh thyme leaves.

Assemble Sandwiches:

  1. Butter one side of each bread slice with remaining 4 tbsp butter.
  2. Place bread slices butter side down. Layer with provolone, ¼ of the apple mixture, bacon, and ¼ of the cheddar-thyme mixture. Top with another slice of bread, butter side up. Repeat for all sandwiches.

Cook Sandwiches:

  1. In a nonstick pan over medium-low heat, cook sandwiches until golden brown and cheese has melted, about 3 minutes per side. Flip carefully halfway through cooking.

Serve:

  1. Cut sandwiches in half and serve immediately.

Tip:

  • Can be made ahead and wrapped in plastic wrap or layered with parchment paper between each sandwich for quick service later.
